Tasting Notes: A deep purple-blood red colour with uplifting mulberry, dark plum, coffee bean and nutmeg flavours. Deliberately a drier style of Sparkling Shiraz. A wine that lets the fruit from the vineyard shine through and offers powerful flavours for food matching without any overt sweetness. Great with Parmesan Cheese, Rabbit Terrine, Xmas Pudding. Drink now or cellar well.
Base Wine – grapes from old Ulithorne vineyard
11 years of back vintage Frux Frugis Shiraz blended into the base wine of the 2014 disgorged Flamma to enhance complexity. Fruit was harvested with dark red plum & mulberry fruit flavours in March 2013.
1st Fermentation in open fermenters then matured in old French Oak barrels for 14 months.
Bottle fermentation: In Oct 2013, base wine was then transferred to bottle with yeast for 2nd (bottle) ferment, remaining on lees for 9 months until it was disgorged for release.
Dosage: Dry in style, the dosage is a tiny 5g/L of 20-year-old McLaren Vale fortified wine.
