CHI (Interpretation – Balance, life force) is a traditional Rhone style blend of Grenache and Shiraz, being based typically on old Grenache bush vine plantings in the elevated Blewitt Springs subregions. From 2007 until 2016 the fruit was sourced from growers in the elevated sandy slopes of Blewitt Springs and McLaren Flat’s older 50 plus year old plantings, with the blend composition changing depending on the vintage. Since Vintage 2017, the CHI has been made as a single vineyard blend of Shiraz and Grenache from our own property.

Shiraz & Grenache
Wild strawberries and raspberries on the nose and a lightness of bright cherries and spice on the lengthy palate, the flavours are delightfully balanced with soft tannins. This wine is ideal wine with Mediterranean meat dishes. There is a European style to the weight of this wine, which comes from the quality vines, thoughtful viticulture, and a dedication to detail in vinification techniques.

Winemaking: Crushed to small open fermenters for a slow and cool fermentation with hand plunging twice a day before being gently pressed to barrel. The batches of Shiraz and Grenache are matured separately until the final blending stage.
Oak Maturation: Both varieties are aged in older French oak barrels for 14 months to mature well, but without oak influence on flavour.
