Ulithorne ‘CHI’ Shiraz Grenache 2017
The CHI is essentially the balance of two varieties, in balance within our vineyards.
Balance is essential in blending this Rhone inspired wine with length, fruit complexity and palate weight.
The Blue of our label represents the beautiful blue seas only 4 km to the west, that bring the cooler afternoon gulf breezes that aid in the development of the complexity of flavours. The gold background represent the deep ancient sand hills in which the vineyards were planted in 1950.
Tasting Notes: This wine is about showing the elegance that an old bush vine Grenache can bring to the table. This 2017 has been sourced entirely from our own Ulithorne vineyards on Kays Road planted in 1950.
With wild strawberries and raspberries on the nose, and a lightness of bright cherries and spice on the palate, the flavours are balanced with soft tannins. This wine is ideal wine with Mediterranean meat dishes.
There is a European style to the weight of this wine, which comes from old bush vines, thoughtful viticulture & a dedication to detail in the vinification techniques.
Technical Notes: Ferment: Grenache cooled as whole bunches overnight, crushed then fermented in small open fermenters with hand plunging twicea day. Basket Pressed. Natural malo-lactic in barrel. Shiraz treated similarly though kept separate until final blending. Both varieties aged in older French oak barrels for 14 months to mature well, but without oak influence on flavour.
