100% Shiraz grapes grown in the McLaren Vale wine region.
The grapes are cooled as whole bunches overnight, crushed the following morning, and fermented in small open fermenters whilst gently hand plunging twice a day. Then intently matured in new to 3 year old French barrels for 18 months prior to blending and bottling.

Vintage 2015: Scents of cherry and damson are lifted by aromatic spices. The soft mouthfeel is filled out with gentle oak, cigars and inky tar notes. It’s dancing but seriously concentrated, with black cherry richness followed by spice and fresh acidity. A balanced conclusion. This is a wing to age.
