SPECIALIS: [Latin] special; project

The “Special Project” was inspired by our infatuation with the wines of Northern Spain. This wine is an inspiration of the complimentary connection between glass and plate that Ulithorne was entrusted to develop for a  Sydney chef’s trendy new high-end restaurant. The wine was made in line with the principles of our Rhone core, however, due to the Spanish influence the wine is a “Black Sheep” of our Ulithorne family.

The Specialis is earthy and brambly with fresh cherries, raspberries, red currants and delicate spices on the palate. It has medium weight with savoury tannins, juicy fruit and a fresh acid line. Our Specialis is individually numbered.

The Source

55% Tempranillo, 36% Grenache, and 9% Graciano grapes grown in the McLaren Vale wine region.

The Process

Tempranillo from one of our growers, two lots of Grenache from Blewitt Springs and a very small lot of Graciano were fermented in small open fermenters with hand plunging twice a day before gentle pressing. Matured in older French & American oak barrels for 10 months before blending.
