SPECIALIS (Interpretation – Special, project) is a wine inspired by the North of Spain where it is made to be enjoyed with food and family. The beginnings of this wine started out as a “Special Project” wine made for a prominant Sydney Chef to be used in his restaurant to pair with his Mediterranean menu. From this initial parcel made in 2014, we took back a portion of the wine and labelled it with a black label as a symbol of being the “Black Sheep” of the family, as typically Ulithorne wines have a Southern Rhone influence.

Variety & Style
Tempranillo Grenache Graciano
Earthy and brambly with fresh cherries, raspberries, red currants and delicate spices on the palate. It has medium weight with savoury tannins, juicy fruit and a fresh acid line.

Winemaking: Tempranillo from two of our growers, Grenache from Blewitt Springs and a very small lot of Graciano were fermented in small open fermenters with hand plunging twice a day before gentle pressing.

Oak Maturation: Matured in older French & American oak barrels for 10 months before blending.
