Baume at harvest: 14.1
Ferment: Allowed to rise to 30oC then cooled to 25oC
Run off and pressed to complete fermentation in barrel
Malo-lactic in barrel
Aged 18 months in barrel
25% New French Oak, 17% New American Oak, 58% 1 yr old French oak

Tasting Notes
Wine bottled in December 2005. This Shiraz exhibits a complex nose of ripe berry fruit
(plums and blackberry) evident with new oak tones of vanilla and spice. The tannins are bold and the wine has a beautiful complexity that will further develop with bottle age.

Vintage Observation
2004 was a better year overall with milder summer temperatures and an excellent autumn but winter rains were very low and late and vineyards were very low bearing.
